Lei (thunder) Cha (tea) was so named because of the loud noise made when the ingredients were traditionally pounded in a pestle and mortar. Essentially, it is a rice bowl topped with an assortment of green vegetables, beans, nuts, tofu, etc. A hot green broth is poured into the bowl and given a good mix. Very unique, very healthy but certainly not everyone's cup of tea. Don't mind the pun! Grassy and a tad bitter, Lei cha is an acquired taste. Think ancient Chinese pesto!
